Yellow Curry



Fry onion with garlic. Remove from pan. Fry capsicum and pineapple. Remove from pan.

Add chicken to pan and brown. Add yellow curry paste and coat evenly. Ensure mixture is evenly cooked for a few minutes and chicken is almost done. Add coconut milk. Add some of the the pineapple juice / syrup (sweet) and fish sauce (salty) to taste and allow chicken to cook.

Mix in remaining vegetables.including carrot strips. Stir through mint or parsley leaves. Serve on a bed of rice.
