baked salmon


  • 1 potato
  • 1 piece of Jap pumpkin
  • brocolli
  • fillet of salmon with skin
  • salt and pepper


  1. spray potato and pumpkin with canola oil. Sprinkle with seasoning
  2. place in oven on middle shelf and bake at 160 degrees celcius for approximately 65 minutes
  3. season salmon with salt and pepper, wrap in tin foil and place in the oven (skin side down) 20 minutes before the veges are due to finish
  4. place brocolli in microwave dish with a small amount of water. cover and microwave for approximately 2 minutes as you remove the other items from the oven
  5. plate up the potato, pumpkin, salmon and brocolli


Cooking times will vary depending on the size of the vegetables, type of oven and power of microwave. Make sure you adjust accordingly.

Wrapping the salmon in tin foil will retain the juices and prevent the fish from drying out. Placing it skin side down (on the tin foil and oven), means that the skin will stick to the foil and fish will peel away from the skin easily when you remove it from the foil. When you plate up you will have a beautiful succulent skinless salmon.

I use McCormack's Bush Spices to season my roast vegetables.
